Fried Couscous - Lunch Version

<p>This twist on fried rice has quickly become an often requested dish in our house! Easy to fix and freeze, this makes for a tasty lunch or side dish for dinner.</p>

Ingredients

  • 4 individual beat Egg
  • 1 tablespoon Sesame Oil
  • 1 1/2 cups Broccoli Slaw (Shredded Broccoli)
  • 2 tablespoons peel and mince Ginger, Fresh
  • 2 teaspoons mince Garlic, Cloves
  • 2 cups cook Couscous, Whole Wheat
  • 1 tablespoon Brown Sugar
  • 4 tablespoons Soy Sauce, Low Sodium

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Coat a large saute pan with cooking spray and bring to medium heat.
  2. Add beaten eggs and stir until scrambled.
  3. Remove eggs from pan and set aside.
  4. In the same pan, pour sesame oil and bring to medium-high heat.
  5. Add the broccoli slaw, ginger and garlic and stir together. Cook for about 4 minutes, stirring, until vegetables are slightly softened.
  6. Stir in the couscous and cook for an additional 2 minutes, browning the couscous.
  7. Combine the brown sugar and soy sauce in a small bowl and whisk quickly to dissolve the sugar.
  8. Add the sauce to the couscous and stir to combine.
  9. Add the eggs and stir thoroughly.

Why would I want to freeze this?

  7. Combine the brown sugar and soy sauce in a small bowl and whisk quickly to dissolve the sugar.
  8. Add the sauce to the couscous and stir to combine.
  9. Add the eggs and stir thoroughly.
  10. Allow to cool.
  11. Divide among indicated number of freezer bags, label and freeze.
