Stove Cook
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Add lemon to hot water and allow to soak for 30 minutes.
- Steam cauliflower and onion together for 15-20 minutes until crisp tender. Be careful not to let it get too tender or soggy.
- Drain well and transfer to food processor. Pulse 5-10 times until it becomes a rice-like texture. Remove any remaining pieces of cauliflower and process them separately. Be careful not to puree.
- Heat the ghee in a small saucepan until warm and bubbly over medium heat.
- Drop garlic in, stir and remove from heat. This will take the bitter edge from the garlic without overcooking.
- Remove lemon from water and reserve indicated amount of lemon water.
- Toss cauliflower rice, garlic, salt, and lemon water in a bowl. Add more salt if desired.
