GAPS Cauliflower Rice

<p>Fluffy, tender and steamed to perfect texture. GAPS friendly Cauliflower Rice is a great substitute for an old comfort favorite.</p>

Ingredients

  • 1/4 cups slice Lemon
  • 1 cup Water, Hot
  • 4 cups Cauliflower, Diced and Remove Stems
  • 1 cup dice Onion
  • 1 tablespoon Ghee
  • 1 tablespoon mince Garlic, Cloves
  • 1 teaspoon Salt
  • 1 tablespoon Lemon Water

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Add lemon to hot water and allow to soak for 30 minutes.
  2. Steam cauliflower and onion together for 15-20 minutes until crisp tender. Be careful not to let it get too tender or soggy.
  3. Drain well and transfer to food processor. Pulse 5-10 times until it becomes a rice-like texture. Remove any remaining pieces of cauliflower and process them separately. Be careful not to puree.
  4. Heat the ghee in a small saucepan until warm and bubbly over medium heat.
  5. Drop garlic in, stir and remove from heat. This will take the bitter edge from the garlic without overcooking.
  6. Remove lemon from water and reserve indicated amount of lemon water.
  7. Toss cauliflower rice, garlic, salt, and lemon water in a bowl. Add more salt if desired.
