  • 12 ounces Rotini
  • 1/2 tablespoons Olive Oil
  • 2 teaspoons mince Garlic, Cloves
  • 2 cups Diced Tomatoes, Canned
  • 2 cups drain Garbanzo Beans (Chick Peas), Canned
  • 1/3 cups drain Kalamata Olives, Whole, Canned
  • 2 cups chop Spinach
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 1/2 cups Sun-Dried Tomatoes, Julienne
  • 1/2 cups Feta Cheese Crumbles

  2. Heat olive oil in a large saucepan over medium heat.
  3. Add garlic, cooking until lightly brown about 1-2 minutes.
  4. Add diced tomatoes and chickpeas and cook 1-2 minutes.
  5. Add olives, spinach, salt, pepper, and sundried tomatoes and cook 10 more minutes, allowing the sauce to thicken.
  6. Remove from heat and add feta.
  7. Combine pasta and sauce.
