<p>Still looking for ways to use up all that zucchini from the garden? These cakes are a great way to use zucchini and can be served as a light lunch or dinner. Or, use a smaller batch for a side dish.</p>

  • 2 individual Egg
  • 1 cup Panko Bread Crumbs
  • 1 tablespoon Mayonnaise, Light
  • 1 tablespoon dice Onion
  • 1 1/2 teaspoons Old Bay Seasoning
  • 2 tablespoons Flour, All-Purpose
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
