These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Mix quinoa, eggs, salt, pepper, garlic, shallots and chives in a bowl.
- Add Mozzarella, Parmesan, flour, and panko. Mix well.
- Let stand for 5 minutes.
- Heat olive oil in pan until shimmering.
- Press the mixture into indicated number of round cakes.
- Saute patties for about 6 minutes per side, flipping halfway through until dark brown.
- Place on paper towels after cooking to drain excess oil.
- Serve warm.

I’d probably make a creamy sauce and serve them with roasted dill carrots.

We absolutely love these! We have them as part of a regular meal (potatoes, gravy, veg, etc.) or even on crusty bread as a sandwich with Ranch Dressing or tartar sauce and fries. Excellent!

My toddler loves these… making another batch tonight! Sometimes we add a dollop of sour cream when serving.

Has anyone ever baked them in the oven to speed up the bulk cooking??
We haven’t in our kitchens, but I think it would work just fine. You just might not get that same crisp you get from the pan. Let us know if you try!
