Tricia and Christine, Thanks ladies for 2 lovely menus this month… Got some great ideas to try. Just wanted to point out that I think there may be an error in the calculation on the printable recipe cards for the Ginger yogurt parfaits. Check out the servings as I think that if you have 8 cups of yogurt that would make 16 1/2 cup servings ?
I double checked it and the original version makes 4 servings with 2 cups, if you multiply that 4 times for a total of 15 servings for the FULL menu that is 8 cups of yogurt. . .Am I missing what you said is wrong?
Great blog! I’m having success with the greek yogurt diet and wondered if anyone else is using it.
Made this with vanilla Greek yogurt. Eating my first one for lunch today–wow, what a flavor punch! Absolutely delicious. I only made two parfaits with this recipe, but they are my main mid-day meal, and my freezer cups are ones I normally use with make-ahead smoothies, so they are 2-cup capacity. This is a good-sized mid-day meal, that’s for sure!
This was so good!!! I added 2 tsp honey, 1/2 tsp vanilla, cardamom and cinnamon to plain greek yogurt and used canned pears. I ate one serving and freezed the rest. I haven’t tried a frozen serving yet. Looking forward to grabbing those on my way to work. Thank you for a great idea to make yogurt more interesting.
Oh wonderful! And what great additions!
