Freeze For Later Cooking Directions

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. Roll dough out into a rectangle.
  2. Cut 4 inch wide by 6 inch tall rectangles, one for each serving.
  3. Place on a baking sheet and refrigerate while filling is prepared.
  4. Cut each piece of bacon in half.
  5. Heat a pan over medium-low heat.
  6. Combine eggs #1, milk #1, and salt. Pour into heated pan and scramble until cooked.
  7. Set aside to cool.
  8. Remove dough from refrigerator. On each short end of the rectangles, place 1 Tablespoon of cheese and 1 half-slice of bacon. Divide eggs among rectangles, placing on top of bacon. Cover with 1 Tablespoon of cheese.
  9. Place water in a bowl.
  10. Run a wet finger along the edges of each rectangle and fold in half. Press down to ensure filling stays in.
  11. Combine milk #2 and eggs #2 in a bowl.
  12. Brush egg wash over the top of each packet.
  13. Sprinkle remaining cheese over the top of the egg wash.
  14. Place pan in freezer for 5 minutes so that dough can firm up.
  15. Bake at 375F for 15 minutes.
  16. Allow to cool.
  17. Wrap in plastic wrap, divide among indicated number of gallon freezer bags, label, and freeze.
