  1. Mix the ground flax seed with the hot water in a bowl, and let the mixture sit for 5 minutes until thickened.
  2. Whisk together the rice flour, potato flour, baking powder, baking soda, and salt in another bowl.
  3. Blend the coconut milk with the honey and then add to the flax seeds mixture. Stir well.
  4. Put the dry ingredients into the wet ingredients and mix until the batter looses the bulk of its lumps.
  5. Add the blueberries and fold them in gently with a spatula.
  6. Cook in waffle iron according to manufacturer's instructions.

  1. Just found your recipe for the waffles…I am looking forward to making them to have on hand for my little two year old grandson…he is completely dairy free because of allergies…this will rank high with the little carb munchkin!

  2. My 3 year old and 4 year old LOVE these and the Spiced Apple Pancakes from a few months ago. I keep both on hand in my freezer, SO much better then Eggos!
