- Mix the ground flax seed with the hot water in a bowl, and let the mixture sit for 5 minutes until thickened.
- Whisk together the rice flour, potato flour, baking powder, baking soda, and salt in another bowl.
- Blend the coconut milk with the honey and then add to the flax seeds mixture. Stir well.
- Put the dry ingredients into the wet ingredients and mix until the batter looses the bulk of its lumps.
- Add the blueberries and fold them in gently with a spatula.
- Cook in waffle iron according to manufacturer's instructions.
