  1. Combine flour, arrowroot powder, baking powder, salt and xanthan gum in a bowl.
  2. Melt coconut oil in microwave, approx. 30-45 sec.
  3. In separate bowl combine coconut oil, almond milk, lemon juice, eggs and maple syrup.
  4. Whisk until combined.
  5. Add wet ingredients to dry ingredients and whisk until smooth.
