  • ⅔ cups slice Carrot

  • ⅛ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 3 cups Beef Bone Broth/Stock
  • 1 cup Peas, Frozen
  • 1 ½ cups White Rice, Long-Grain

Make It Now Cooking Directions

Stove Cook

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Put olive oil in large skillet and saute garlic.
  2. Add chicken and brown each side.
  3. Add chorizo and carrots.
  4. Cook for around 5 minutes and then add tomato paste, salt, pepper and beef broth.
  5. Cover and simmer for 30 minutes. If more liquid is needed, add more broth or a small amount of water.
  6. Add peas and rice and cook until rice is done, about 12 minutes.
  7. Place contents in 8 inch square pan and bake at 350 degrees for about 20-25 minutes.

  1. Do you have a name brand or idea where I can look for the chorizo? I live in Southern Arizona so we have lots of Mexican style chorizo-not the choppable Spanish style chorizo. Also, the closest Whole Foods t Trader Joes is 1.5-2 hours away. Thanks

    1. I use the Boar’s Head brand, which is carried in a local supermarket. Hans All Natural Sausages are also fine. If you are unable to locate Chorizo, any type of smoked sausage would be a good substitute.
