Make It Now Cooking Directions
Stove Cook
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Put olive oil in large skillet and saute garlic.
- Add chicken and brown each side.
- Add chorizo and carrots.
- Cook for around 5 minutes and then add tomato paste, salt, pepper and beef broth.
- Cover and simmer for 30 minutes. If more liquid is needed, add more broth or a small amount of water.
- Add peas and rice and cook until rice is done, about 12 minutes.
- Place contents in 8 inch square pan and bake at 350 degrees for about 20-25 minutes.

Join the discussionDo you have a name brand or idea where I can look for the chorizo? I live in Southern Arizona so we have lots of Mexican style chorizo-not the choppable Spanish style chorizo. Also, the closest Whole Foods t Trader Joes is 1.5-2 hours away. Thanks
I use the Boar’s Head brand, which is carried in a local supermarket. Hans All Natural Sausages are also fine. If you are unable to locate Chorizo, any type of smoked sausage would be a good substitute.
