Gluten Free Dairy Free Chicken and Rice

<p>This delicious and filling meal is truly a one dish dinner. It's filled with veggies, rice and meat. Everyone in the family will enjoy this dinner which puts a new spin on chicken and rice.</p>

Ingredients

  • 2 tablespoons Olive Oil
  • 1 teaspoon mince Garlic, Cloves
  • 2 1/2 cups dice Chicken, Boneless Breasts
  • 3 2/3 cups slice Chorizo Sausage
  • 2/3 cups slice Carrot
  • 2 tablespoons Tomato Paste
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 3 cups Beef Bone Broth/Stock
  • 1 cup Peas, Frozen
  • 1 1/2 cups White Rice, Long-Grain

  1. Put olive oil in large skillet and saute garlic.
  2. Add chicken and brown each side.
  3. Add chorizo and carrots.
  4. Cook for around 5 minutes and then add tomato paste, salt, pepper and beef broth.
  5. Cover and simmer for 30 minutes. If more liquid is needed, add more broth or a small amount of water.
  6. Add peas and rice and cook until rice is done, about 12 minutes.
  7. Place contents in 8 inch square pan and bake at 350 degrees for about 20-25 minutes.
