- In a large pot over medium heat, melt coconut oil.
- Saute leeks, garlic, celery and red onion until soft.
- Add wild rice, salt, pepper, thyme and sage and stir until combined.
- Add chicken stock and bring to a boil.
- Simmer for 20 minutes.
- Add chicken and bacon and parsley.
- Simmer for another 10 minutes.
