  1. Spray the muffin pan with nonstick cooking spray.
  2. Line with ham slices.
  3. Place frozen potatoes and butter in microwaveable bowl.
  4. Microwave for 2 minutes.
  5. Place in ham lined muffin tin.
  6. Sprinkle cheese on top.
  7. In a small bowl, combine eggs, milk, salt and pepper.
  8. Beat with a fork.
  9. Pour egg mixture over potatoes and cheese.
  10. Sprinkle with green onions.
  11. Bake at 350 for 20-25 minutes.

  1. Sounds delicious!! Just curious if you used a mini muffin or regular sized tin? Also how many ham cups does one recipe yield? Thanks!!

    1. Hi Cheryl! You are correct, the recipe calls for butter, shredded cheese and milk – but it calls for dairy free butter, dairy free shredded cheese and dairy free milk. All three of these ingredients can easily be purchased at your local grocery store. If you desire to use regular ingredients that is fine, but yes, then the recipe will not be dairy free.
