Gluten Free Dairy Free Pizza Muffins - Lunch Version

Ingredients

  • 1 tablespoon Olive Oil
  • 1/2 cups dice Onion
  • 2 teaspoons mince Garlic, Cloves
  • 3/4 cups dice Ham, Fully Cooked
  • 1/2 cups dice Bell Pepper, Green
  • 1/2 teaspoons Oregano, Dried
  • 1 teaspoon Basil, Dried
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 7 tablespoons Tomato Sauce
  • 2 cups Flour, Gluten Free All-Purpose
  • 1 tablespoon Baking Powder
  • 2 individual Egg
  • 1/2 cups Milk, Dairy Free
  • 1/4 cups Vegetable Oil
  • 1 cup Mozzarella Cheese, Shredded, Dairy Free

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Heat a frying pan on low to medium heat with olive oil.
  2. Add in the onions and garlic, sauteing until translucent.
  3. Then add in the diced ham, peppers and seasonings, sauteing another 3 minutes or so.
  4. Add in the tomato sauce, and simmer 3-4 minutes.
  5. Removing from heat to cool.
  6. In a mixing bowl, whisk up the eggs really well, adding in the milk and oil, whisking to combine.
  7. Add the flour and baking powder to the egg mixture, begin stirring, then add in the tomato sauce mixture, stirring to combine.
  8. Mix in the cheese substitute, and drop by large spoonfuls into oiled muffin tins.
  9. Bake at 350 degrees about 25-30 minutes.
  10. Let cool for a few minutes before serving.
