Ingredients

  • 2 tablespoons Olive Oil
  • 5 cups dice Smoked Sausage, Gluten Free, Dairy Free
  • 2 1/4 cups slice Onion
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1 1/2 cups slice Bell Pepper, Green
  • 1 1/2 cups slice Bell Pepper, Red
  • 1 1/2 cups slice Bell Pepper, Yellow
  • 2 teaspoons mince Garlic, Cloves
  • 1 tablespoon Italian Seasoning
  • 1/2 cups Chicken Broth/Stock

  1. Heat the olive oil in a large skillet, and brown the sausage pieces.
  2. Remove from the heat and set aside.
  3. Using the sausage drippings, add the onions to the pan, stirring to coat. Season with salt and pepper.
  4. Cook until the onions have started caramelizing and softening.
  5. Add the sliced peppers, garlic and Italian seasoning and cook until the peppers softened.
  6. Return the sausage to the pan, add the chicken broth and cook until the sausage has heated through and the liquid has reduced.
