Buffalo Chicken Sandwiches- Gluten Free Dairy Free Version

Ingredients

8 servings
  • 4 cups cook and shred Chicken, Boneless Breasts
  • 1 tablespoon Olive Oil
  • 1 ¼ cups dice Onion
  • 3 teaspoons mince Garlic, Cloves
  • 1 ½ cups dice Bell Pepper, Red
  • ¼ cups Water
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 14 ½ ounces Crushed Tomatoes, Canned
  • ¼ cups Cayenne Pepper Sauce, Gluten Free
  • 3 tablespoons Worcestershire Sauce, Gluten Free
  • 2 tablespoons Mustard, Yellow
  • 1 tablespoon Molasses
  • 8 individual Hamburger Buns, Gluten Free (serving day)

Freezer Containers

  • 8 Quart Freezer Bags

Directions

Place chicken in slow cooker. Heat oil in skillet. Saute onion, garlic and pepper. Cook until vegetables are tender. Add water to vegetables and season with salt and pepper, then transfer to slow cooker. Add tomatoes, hot sauce, Worcestershire sauce, mustard and molasses to slow cooker. Cover. Cook on low for 4 hours Let cool. Serve on gluten free hamburger bun.

Freezing Directions

Place chicken in slow cooker. Heat oil in skillet. Saute onion, garlic and pepper. Cook until vegetables are tender. Add water to vegetables and season with salt and pepper, then transfer to slow cooker. Add tomatoes, hot sauce, Worcestershire sauce, mustard and molasses to slow cooker. Cover. Cook on low for 4 hours Let cool. Divide among indicated number of quart freezer bags. Label and freeze.

Serving Day Directions

Reheat in microwave for 1 minute. Serve on gluten free hamburger buns.

These delicious gluten free and dairy free buffalo chicken sandwiches are an easy slow cooker meal. They have a nice kick of flavor but aren't overkill. A perfect sandwich to take to warm up for lunch!
