These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Add browned ground beef, onion, salt #1, chili powder, garlic, red pepper and oregano.
- In another bowl, mix together remaining ingredients, except corn and vegetable oil.
- Mix both bowls together, then fold in corn.
- Heat vegetable oil in a large pot.
- Scoop 2 Tablespoons into the pan, and flatten to create a patty.
- Fry for 5-7 minutes on each side.
- Repeat until all mixture is cooked.

I’m starting to make these right now, and notice in the directions it mentions cumin. . . but no cumin measurement in the ingredients list. Uh oh.
I have the post updated now. Thanks for catching that. No cumin in the recipe, but if you like it in your taco seasoning, go ahead and add a bit to taste. I do, but I know not everyone loves it as much as me! 🙂
Hi quick question! When you say six servings… does that mean it makes 6 “patties” ?
I actually made two to three fritters a piece so I could work with smaller amounts of the batter. Smaller patties seemed to stay together better when flipping; much more manageable. Of course, if you are feeding a toddler, you will get more servings that way. 🙂 Hope that helps!
It made about 15 small (3”x3”) fritters!
Wow Angela, I made these (w/ the Lentil-Rice “Beef”)…so incredible and easy. The kids absolutely love them, too.
Could you bake these?
I have not tried these baked. However, if I were to try it I would use a well oiled pan or silpat, shape the fritters, then spray or brush a bit of oil on the fritters before I baked them. I would try it with just one or two to start with, just to see how they bake up and how long they take to bake before making a big pan of them in case it doesn’t work out. Let us know how it works for you!
