Ingredients

  • 2 pounds Chicken, Boneless Breasts
  • 1/2 cups drain Black Olives, Sliced, Canned
  • 15 1/2 ounces drain Diced Tomatoes, Canned
  • 1/2 cups Feta Cheese Crumbles
  • 4 tablespoons Olive Oil
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon mince Garlic, Cloves
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1 cup slice Lemon

  1. Cut foil into 12 inch squares for indicated number of servings.
  2. Divide chicken onto indicated number of sheets.
  3. Divide olives, tomatoes, potatoes onto the chicken breast.
  4. Top with feta cheese, olive oil, italian seasoning, garlic, salt, pepper and lemon slices.
  5. Fold the empty side of the foil sheet over and crimp the edges over three times to create a tight packet.
  6. Place packets on a rimmed baking sheet and bake at 375 for 20 minutes-30 minutes, depending on the thickness of your chicken.
