Halibut Fish Tacos with Mango Salsa

Ingredients

4 servings
  • 1 cup Mango, Chunks
  • ¼ cups dice Onion, Red
  • ¼ cups seed and dice Jalapeño
  • ¼ cups chop Cilantro, Fresh
  • 1 tablespoon juice Lime
  • 1 tablespoon Honey
  • ½ pounds Halibut
  • 4 individual Flour Tortillas, Whole Wheat (8-inch/Med) (serving day)

Freezer Containers

  • 1 Gallon Freezer Bag
  • 1 Quart Freezer Bag

Directions

Grill or broil fish 3-4 minutes per side. In a bowl, combine the mango, onion, jalapeno, cilantro, lime juice and honey. Chop fish into bite size pieces. Serve on whole wheat tortillas with mango salsa.

Freezing Directions

In a bowl, combine the mango, onion, jalapeno, cilantro, lime juice and honey. Divide halibut among gallon size freezer bags. Divide salsa among quart size freezer bags, placing in with fish. Label and freeze.

Serving Day Directions

Grill or broil fish 3-4 minutes per side. Chop fish into bite size pieces. Serve on whole wheat tortillas with mango salsa.
