Why would I want to freeze this?
- Combine ham and soy sauce #1 in a bowl. Let sit.
- Heat canola oil #1 over medium heat.
- Brown the onion, and add additional oil as needed.
- Add the asparagus and cook until tender-crisp and bright green.
- Add the ham and cook until heated through.
- Add the garlic and stir a few times. Then remove all ingredients to a bowl.
- Add canola oil #2 to the skillet.
- Add the cooked rice, tossing around to fry in the oil.
- Add scrambled eggs, tossing until they are fully cooked.
- Add the additional bowl of cooked veggies to the pan along with soy sauce #2 tossing to combine.
- Let cool.
- Divide among indicated number of bags. Seal, label and freeze.
