Freeze For Later Cooking Directions
These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).
Why would I want to freeze this?
- Melt the butter in a skillet over medium-low heat.
- Add the leeks and saute until tender.
- Stir in the sour cream and simmer for 1 minute.
- In a bowl, combine the ham, Gruyere, leek mixture, spinach, basil, Parmesan, salt #1 and pepper. Set aside.
- Sprinkle the countertop with flour and roll each pastry sheet into an 11x11 inch square
- Cut into 4 equal squares.
- Brush the edges of each square with water.
- Place 1/3 cup of filling in the middle.
- Fold the square diagonally to make a triangle.
- Crimp the edges together with the tines of a fork.
- Place empanadas on a parchment lined baking sheet and flash freeze.
- Transfer to the indicated number of freezer bags.
- Label and freeze.

- Whisk the milk and egg in a bowl.
- Brush the pastries with the egg wash and sprinkle with salt #2.
- Bake on a parchment lined baking sheet at 400F for 20-25 minutes until puffed and golden brown.
