Ingredients

  • 1 cup Bran Cereal
  • 1 1/3 cups Buttermilk
  • 1/4 cups Applesauce
  • 1 individual Egg
  • 1 teaspoon Vanilla Extract
  • 3/4 cups Brown Sugar
  • 1 teaspoon Baking Soda
  • 1/4 teaspoons Sea Salt
  • 1/2 cups Flour, All-Purpose
  • 1/2 cups Cocoa Powder
  • 1/2 cups Flour, Whole Wheat
  • 1/3 cups Chocolate Chips

  1. Line a regular-size muffin tin with paper cups.
  2. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet.
  3. In mixing bowl, mix cereal and buttermilk.
  4. Let stand 5 minutes.
  5. Stir in applesauce and egg(s).
  6. Add remaining ingredients except chocolate chips and mix until just blended.
  7. Stir in chocolate chips.
  8. Divide batter evenly among muffin cups.
  9. Bake at 375 for 15 to 20 minutes or until toothpick inserted in center comes out clean.
