Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

Freeze For Later Cooking Directions

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. Place the dates in a bowl of warm water for twenty minutes to soften.
  2. Grind walnuts in a food processor. Leave a few chunks for texture.
  3. Add dates and water (if needed) to keep blending. Mixture will be sticky so you may need to pause and scrape down the walls.
  4. Scrape the mixture into a bowl and add cacao, maple syrup and shredded coconut #1.
  5. Grease hands with coconut oil and roll mixture into balls. Roll balls in shredded coconut #2. Lay on a parchment covered baking sheet. Repeat until all of the mixture is gone.
  6. Flash freeze.
  7. Divide frozen balls among indicated number of bags, label and freeze.
