One of our favorite meals is having breakfast for dinner, and I've recently come up with a delicious (and easy!) way to spice up run-of-the-mill pancakes for a weeknight supper. Serve with turkey bacon and cinnamon apples for a complete meal!

- 1 teaspoon Cinnamon
- 2 tablespoons Brown Sugar
- 1 ½ teaspoons Vanilla Extract
- 1 ½ cups Water

I’m sorry, guys, I totally forgot to add the vanilla on the ingredient list! It is 1 1/2 tsp vanilla extract. I will update the post now.
We love eating pancakes for dinner too. But, am I missing something? What makes these “healthy” and “vanilla”?
Hi Cecilia, as I mentioned earlier, I made a mistake and left out the vanilla from the list. It is 1 1/2 tsp vanilla extract, and I am updating the post as we “speak”. The healthy is the fact they are low-fat, and relatively low in WW points, as well as using the heart-healthy pancake mix.
where’s the vanilla?
I am diabetic and only allowed 35 carbs per meal. For me, this is not healthy. It sounds delicious. I just wish I could find more recipes that were actually healthy for diabetics.

Could you substitute the Bisquick for the homemade pancake mix on your website? I am trying to think of pancake recipe that I could go with your homemade mix and also with the homemade vanilla extract I am making and these sound great. Made these this morning. There’s no eggs or oil. Very thick and doughy. Kind of disappointing, but I may have measured wrong or something.
these pancakes are labeled as low sodium but the nutritional value seems to indicate high sodium at over 1000 per serving. can you please take a look and see if the nutritional value is correct?
