Healthy Hidden Veggie Pasta

Ingredients

4 servings
  • 3 tablespoons Butter
  • 1 teaspoon mince Garlic, Cloves
  • 8 ounces Diced Tomatoes, Canned
  • ¼ teaspoons Onion Powder
  • ⅛ teaspoons Red Pepper Flakes
  • 2 tablespoons Basil, Dried
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Black Pepper
  • 1 cup cook Ground Beef
  • 8 ounces Elbows
  • 1 ½ cups dice Squash, Yellow
  • ¼ cups Parmesan Cheese, Grated (serving day)

Freezer Containers

  • 1 Gallon Freezer Bag
  • 1 Quart Freezer Bag

Directions

Bring a salted pot of water to a boil and add pasta. Cook pasta for 2 minutes, then add squash. Cook another 5-7 minutes (depending on pasta shape) or until pasta is tender. Drain pasta. Melt butter in a sauce pan over medium heat. Add garlic and saute 1-2 minutes until fragrant. Add diced tomatoes, onion powder, and red pepper and cook 2-3 minutes until bubbling. Stir in basil, salt, pepper and ground beef. Combine pasta and sauce and reheat. Garnish with Parmesan cheese as desired.

Freezing Directions

Add diced tomatoes, onion powder, and red pepper and cook 2-3 minutes until bubbling. Stir in basil, salt, pepper and ground beef. Add pasta to boiling water, cook 2 minutes, then add squash. Cook another 5-7 minutes (depending on pasta shape) or until pasta is tender. Drain pasta. Divide pasta/squash into the same indicated number of gallon freezer bags. Divide sauce among quart freezer bags and place inside bag with pasta. Label and lay flat to freeze.

Serving Day Directions

Combine pasta and sauce and reheat. Garnish with Parmesan cheese as desired.
