Ingredients

  • 3 tablespoons Butter
  • 1 teaspoon mince Garlic, Cloves
  • 8 ounces Diced Tomatoes, Canned
  • 1/4 teaspoons Onion Powder
  • 1/8 teaspoons Red Pepper Flakes
  • 2 tablespoons Basil, Dried
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 1 cup cook Ground Beef
  • 8 ounces Elbows, Whole Wheat
  • 1 1/2 cups dice Squash, Yellow

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Bring a salted pot of water to a boil and add pasta.
  2. Cook pasta for 2 minutes, then add squash.
  3. Cook another 5-7 minutes (depending on pasta shape) or until pasta is tender. Drain pasta.
  4. Melt butter in a sauce pan over medium heat. Add garlic and saute 1-2 minutes until fragrant.
  5. Add diced tomatoes, onion powder, and red pepper and cook 2-3 minutes until bubbling. Stir in basil, salt, pepper and ground beef.
  6. Combine pasta and sauce and reheat.
  7. Garnish with Parmesan cheese as desired.

Why would I want to freeze this?

  1. Bring a salted pot of water to a boil.

  3. Add diced tomatoes, onion powder, and red pepper and cook 2-3 minutes until bubbling. Stir in basil, salt, pepper and ground beef.
  4. Add pasta to boiling water, cook 2 minutes, then add squash.
  5. Cook another 5-7 minutes (depending on pasta shape) or until pasta is tender. Drain pasta.
  6. Divide pasta/squash into the same indicated number of gallon freezer bags.
  7. Divide sauce among quart freezer bags and place inside bag with pasta. Label and lay flat to freeze.
