Freeze For Later Cooking Directions

Why would I want to freeze this?

  1. Combine cashews and salt in a food processor. Blend until cashews are a little bit smaller than peas.
  2. Add dates and blend until a sticky mixture forms, about 15 seconds.
  3. Add vanilla and process for about 10 more seconds.
  4. Finally, stir in chocolate chips.
  5. Cover 8 x8 pans with a piece of parchment paper going both ways. This will make it easier to get the bars out.
  6. Transfer mixture to pan and firmly push down with hand.
  7. Freeze for 15 minutes.
  8. Remove from freezer and slice into bars. Wrap each bar in plastic wrap.
  9. Divide among indicated number of gallon freezer bags. Label and freeze.
