Why would I want to freeze this?

  1. In a dry skillet, toast the walnuts until fragrant and just starting to turn color. Set aside.
  2. Place the dates, cinnamon, honey and water in a food processor and pulse until a thick paste has formed.
  3. Add in the walnuts and pulse a couple more times just to incorporate into the date mixture.
  4. Form the paste into cherry sized balls with wet hands to help prevent sticking.
  5. Roll the date bites in the shredded coconut.
  6. Divide among the indicated number of freezer bags. Label and freeze.
