  1. Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. In a bowl, mix together oats, flour, nuts, cinnamon and salt.
  3. In another bowl, mix together melted butter, honey and vanilla.
  4. Add wet ingredients to dry ingredients and mix well to coat.
  5. Spread mixture onto baking sheet in an even coat, keeping in one large piece (it may not go to end of baking sheet).
  6. Bake at 350F for 10-12 minutes until edges are browned slightly.
  7. Mix in dried cranberries.
