- Line a baking sheet with parchment paper and lightly spray with cooking spray.
- In a bowl, mix together oats, flour, nuts, cinnamon and salt.
- In another bowl, mix together melted butter, honey and vanilla.
- Add wet ingredients to dry ingredients and mix well to coat.
- Spread mixture onto baking sheet in an even coat, keeping in one large piece (it may not go to end of baking sheet).
- Bake at 350F for 10-12 minutes until edges are browned slightly.
- Mix in dried cranberries.
