Huevos Rancheros Breakfast Burritos

<p>On those busy early mornings, these breakfast burritos are packed full of veggies and protein with a Tex-Mex flavor.</p>

Ingredients

  • 1 tablespoon Butter
  • 8 individual Egg
  • 1 1/4 cups dice Onion
  • 1 1/2 cups dice Bell Pepper, Red
  • 1/2 teaspoons Cumin
  • 1/2 teaspoons Garlic Powder
  • 1/2 teaspoons Black Pepper
  • 1/4 teaspoons Salt
  • 16 ounces Refried Beans
  • 8 ounces Mild Green Chiles, Diced, Canned
  • 8 individual Flour Tortillas (8-inch/Med)
  • 1 cup Cheddar Cheese, Shredded

  1. Heat skillet on medium low and add butter.
  2. Scramble eggs along with onion and red bell pepper.
  3. While the eggs are cooking, add in cumin, garlic powder, pepper, and salt.
  4. Once eggs are cooked to desired consistency, remove from pan.
  5. Warm refried beans and green chiles in a small saucepan on the stove.
  6. Microwave tortillas for 30 seconds to soften, then fill with beans, egg mixture, and top with cheese.
  7. Roll tortilla into a burrito and continue assembling until all the tortillas are filled.
