  • 1/2 cups grate Carrot

  • 3/4 cups cook and shred Chicken, Boneless Breasts
  • 2 teaspoons Curry Powder

  • 1/4 teaspoons Black Pepper
  • 2 individual Egg
  • 1/4 cups Coconut Oil

Why would I want to freeze this?

  1. Place grated zucchini and carrots in a strainer lined with a clean kitchen towel.
  2. Sprinkle with sea salt #1 and allow to sit and drain for 30 minutes.
  3. Squeeze as much liquid as possible out of veggies.
  4. Place vegetables in a bowl.
  5. Add chicken, curry powder, salt #2 and pepper to the bowl with the vegetables.
  6. Add in half of the eggs and stir to combine, and add more as needed.
  7. Melt coconut oil in skillet over medium high heat.
  8. Drop vegetable/chicken mixture into oil and press down flat.
  9. Cook fritters on each side until golden brown.
  10. Flash freeze.
  11. Once frozen, divide among indicated number of freezer bags. Label and freeze.
