- Place all ingredients besides pork and apples into a blender. Pulse until combined.
- Place roast, apples, 1 cup of water and blended sauce in Instant Pot.
- Lock lid into place and seal steam nozzle.
- Cook on high pressure for 50 minutes.
- Let pressure release naturally.
- Remove pork from Instant Pot and shred with 2 forks. Change setting to saute to thicken sauce in Instant Pot.
- Place pork back in Instant Pot with sauce and stir to combine.
