Why would I want to freeze this?

  1. **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 6 servings fresh. If you are using more servings you may need to increase your cooking time.**
  2. Set the Instant Pot to the saute function. Add the oil and butter.
  3. Add the leeks, onion, garlic, and rice. Saute, stirring for 3-4 minutes or until the rice is opaque.
  4. Add chicken broth #1, salt and pepper. Stir to combine.
  5. Lock the lid in place and seal the steam nozzle.
  6. Cook on high pressure for 5 minutes.
  7. Quick release the pressure.
  8. Switch the Instant Pot back to saute. Stir in half of broth #2 and stir briskly for 2 minutes.
  9. Add the remaining broth as needed to keep the risotto from getting too thick.
  10. Turn the Instant Pot off and stir in the Parmesan cheese.
  11. Let cool.
  12. Divide among the indicated number of freezer bags. Label and freeze.
