Ingredients

  • 2 pounds quarter Pork Roast
  • 1/4 cups Soy Sauce
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Tomato Paste
  • 1 tablespoon Honey
  • 1 teaspoon mince Garlic, Cloves
  • 1 teaspoon peel and mince Ginger, Fresh
  • 1/4 teaspoons Red Pepper Flakes
  • 2 cups slice Bell Pepper, Green

  2. Place pork in Instant Pot.
  3. In a bowl, whisk together soy sauce, rice vinegar, tomato paste, honey, garlic, ginger, and red pepper flakes. Pour over top of pork.
  4. Add water, lock lid into place and seal steam nozzle.
  5. Cook on high pressure for 30 minutes.
  6. Let pressure release naturally for 5 minutes then release any remaining pressure.
  7. Add in peppers and change setting to saute for 5 minutes.
  8. Stir in cashews and green onions and serve over rice.
