- Add olive oil to inner pot. Using saute function, brown all sides of short ribs.
- Remove from pot and set aside.
- Add bacon, onions and thyme to pan and saute for 5 minutes.
- Add short ribs, bacon mixture, cherries, lemon zest, broth, garlic, and lemon juice to the Instant Pot.
- Lock cover into place and seal steam nozzle.
- Cook on high pressure for 35 minutes.
- Natural release for 5 minutes then quick release any remaining pressure.
