Freeze For Later Cooking Directions

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 9 servings fresh. If you are using more servings you may need to increase your cooking time.**
  2. Blend together the eggs, cottage cheese, Greek yogurt, salt and black pepper.
  3. In silicone egg bite mold, layer sausage, Monterey jack cheese, bell pepper and spinach.
  4. Pour egg mixture in each cup, filling about three fourths full.
  5. Cover the silicone mold with foil.
  6. Add the minimum amount of water needed for your Instant Pot (1-1.5 cups) to the Instant Pot.
  7. Place the silicone mold onto the trivet and lower into the Instant Pot. If you are cooking two silicone molds at once, twist the upper pan slightly so that the cups are not directly on top of each other.
  8. Lock the lid in place and seal the steam nozzle.
  9. Cook on steam setting for 7 minutes.
  10. Allow pressure to release naturally.
  11. Remove the silicone mold from the Instant Pot and let cool.
  12. Gently remove the egg bites from the silicone mold.
  13. Repeat with remaining ingredients until all of the egg bites have been cooked.
  14. Divide among the indicated number of freezer bags. Seal, label and freeze.
