- 1 1/2 cups Beef Bone Broth/Stock
- 1/2 pounds Stew Beef
- 7 1/4 ounces Diced Tomatoes, Canned
- 1/2 tablespoons Tomato Paste
- 2/3 cups dice Onion
- 3/4 teaspoons mince Garlic, Cloves
- 2/3 cups dice Celery
- 1 cup dice Zucchini
- 1 1/4 cups chunk Red Potato
- 1/8 cups dice Bell Pepper, Green
- 1/8 cups dice Bell Pepper, Red
- 1 tablespoon Red Wine Vinegar
- 3/4 teaspoons Italian Seasoning
- 1/2 tablespoons Basil, Dried
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 4 servings fresh. If you are using more servings you may need to increase your cooking time.**
- Place all the ingredients except the butter and flour in the Instant Pot.
- Lock the lid in place and seal the steam nozzle.
- Cook on high pressure for 35 minutes.
- Naturally release pressure for 5 minutes, then quick release remaining pressure.
- While pressure is releasing, melt butter in a saucepan.
- Whisk flour into butter to create a paste.
- Remove 1 cup of broth from the stew and whisk into the flour mixture. Allow to thicken.
- Switch the Instant Pot to saute. Stir the thickened broth back into the stew.
- Allow to simmer for additional 10 minutes or until thickened.

- Lock the lid in place and seal the steam nozzle.
