Make It Now Cooking Directions
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 4 servings fresh. If you are using more servings you may need to increase your cooking time.**
- In a bowl, combine all the ingredients except the bacon.
- Shape the meat into a loaf that will fit into the Instant Pot with 1/2 inch margin on each side.
- Lay the bacon over the top of the meatloaf.
- Pour 1 cup of water into the Instant Pot and place trivet into the bottom.
- Place the meatloaf on top of a large piece of foil. This will support the meatloaf in the Instant Pot and also act as handles for removal.
- Lock lid into place and seal steam nozzle.
- Cook on high pressure for 20 minutes.
- Quick release the pressure.
- Ensure the meatloaf has reached 155 degrees. If not, replace the lid and add an additional 5 minutes of cooking time.
Freeze For Later Cooking Directions
These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).
Why would I want to freeze this?
- In a bowl, combine all the ingredients except the bacon.
- Divide meatloaf mixture among the indicated number of round freezer containers. (Note: creating an indentation or hole in the middle will help your meatloaf cook more consistently after freezing).
- Lay the bacon over the top of the meatloaf.
- Label and freeze.
Make From Frozen Serving Day Directions
These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.
- Thaw: Prep from frozen
- **Depending on your container size/shape and your serving size, you may need to adjust cooking times given as it is based on 4 servings frozen in indicated container.**
- Pour 1 cup of water into the Instant Pot and place trivet into the bottom.
- Place the meatloaf on top of a large piece of foil, inverting if necessary to keep the bacon on top. The foil will support the meatloaf in the Instant Pot and also act as handles for removal.
- Lock lid into place and seal steam nozzle.
- Cook on high pressure for 20 minutes.
- Quick release the pressure.
- Ensure the meatloaf has reached 155 degrees. If not, replace the lid and add an additional 5 minutes of cooking time.
