Make It Now Cooking Directions
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 4 servings fresh. If you are using more servings you may need to increase your cooking time.**
- In a large bowl, mix the eggs, pepper, season salt, saltine crackers, pizza sauce #1, parmesan cheese, mozzarella cheese #1 and oregano.
- Add beef and sausage and mix well.
- Form the meat mixture into a loaf that will fit into the Instant Pot with 0.5 inch margin on the sides.
- Spread remaining pizza sauce #2 over loaf.
- Place the meatloaf on top of a large piece of foil. This will support the meatloaf in the Instant Pot and also act as handles for removal.
- Pour 1 cup of water into the Instant Pot and place trivet at the bottom.
- Place the meatloaf inside the Instant Pot.
- Lock the lid in place and seal the steam nozzle.
- Cook on high pressure for 20 minutes.
- Quick release the pressure.
- Ensure the meatloaf has reached 155 degrees. If not, replace the lid and add an additional 5 minutes cooking time.
- Sprinkle with mozzarella cheese #2 and allow to melt.
- Remove the foil and broil for 3-5 minutes to brown the cheese, if desired.

- Thaw: Prep from frozen

- Quick release pressure.
- Ensure that the meatloaf has reached 155 degrees internally. If not, cook for another 5 minutes.
- Top meatloaf with mozzarella cheese #2 and allow to melt.
- Remove the foil and broil for 3-5 minutes to brown the cheese, if desired.
