Why would I want to freeze this?

  1. **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 6 servings fresh. If you are using more servings you may need to increase your cooking time.**
  2. Place black eyed peas in pressure cooker and cover with enough water to completely cover.
  3. Close and lock lid in place.
  4. Cook on high pressure for 40 minutes.
  5. Meanwhile, in a large skillet over medium heat, saute onion, garlic, peppers and celery until softened.
  6. Stir in broth, crushed tomatoes, smoked paprika, oregano, thyme, liquid smoke, salt, pepper, and cayenne.
  7. Turn heat to medium low and simmer for 30 minutes.
  8. Once black eyed peas are finished, let pressure naturally release.
  9. Add cooked peas and collard greens to the pan and simmer for 5 minutes.
  10. Let cool.
  11. Divide among indicated number of round containers. Label and freeze.
