These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  2. For each serving place one sheet of parchment paper on counter.
  3. Divide pesto among sheets, mounding in the middle of each sheet.
  4. Place one Tilapia filet on top of each pesto mound.
  5. Top with 1 tablespoon of tomato paste on each filet.
  6. Sprinkle the onions on top of tomato paste evenly among the packets.
  7. Sprinkle each packet with salt and pepper.
  8. Place lemon wedge on top.
  9. Fold packet together in the center and roll to seal.
  10. Add the trivet and minimum amount of water needed for your Instant Pot (1- 1.5 cups). Set packets on trivet.
  11. Cook on high pressure for 17 minutes.
  12. Quick release pressure.
