  1. **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 4 servings fresh. If you are using more servings you may need to increase your cooking time.**
  2. Add the trivet and minimum amount of water needed for your Instant Pot (1- 1.5 cups).
  3. Cover each side of tilapia with blackening seasoning and place on trivet.
  4. Cook on high pressure for 5 minutes.
  5. Quick release pressure.
  6. In a bowl while the tilapia is cooking, mix together strawberries, mango, red onion, basil, lemon juice, salt, and pepper.
  7. Top tilapia with mango strawberry salsa.

Why would I want to freeze this?

  1. Sprinkle tilapia with blackened seasoning. Wrap each tilapia fillet in parchment paper. Place wrapped packets in gallon bags.
  2. In a large bowl, combine strawberries, mango, onion, basil, lemon juice, salt, and pepper. Stir well to combine.
  3. Divide salsa into indicated number of quart freezer bags.
  4. Place one salsa bag into each gallon bag. Label and freeze.

These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.

  1. Thaw: Prep from frozen
  2. **Depending on your container size/shape and your serving size, you may need to adjust cooking times given as it is based on 4 servings frozen in indicated container.**
  3. Place salsa bag in water to allow to thaw.
  4. Add the trivet and minimum amount of water needed for your Instant Pot (1- 1.5 cups).
  5. Place tilapia on trivet, lock lid into place and seal steam nozzle.
  6. Cook on high pressure for 5 minutes.
  7. Quick release pressure.
  8. If you need to thaw salsa longer, add salsa on top of tilapia and replace cover to allow heat to penetrate through a few minutes.
