  1. Heat a nonstick skillet over medium heat.
  2. Place one tortilla in skillet, topping with 1/2 cup chicken, 1/2 cup broccoli and 1/2 cup of cheese. Top with another tortilla.
  3. Allow cheese to melt, then flip to cook the other side.
  4. Cut into finger size strips and serve.

      I would just pack them in the lunch box frozen – then they would thaw by lunch time. As long as your kids will eat them cold I think it would work great!

  1. I made these without the chicken and added tomatoes. So, they were broccoli, tomato and cheese quesadillas. I also gave my son salsa to dip them in. Because, you know, dipping is almost getting to play with their food.
