Why would I want to freeze this?

  1. Cut foil into 14-inch lengths, one for each salmon fillet.
  2. Toss the green beans with the olive oil, salt #1 and pepper #1. Divide evenly among the pieces of foil, placing in the center of the foil.
  3. Place one fillet on each pile of green beans.
  4. In a bowl, mix together the butter, lemon juice, zest, garlic, salt #2 and pepper #2. Pour evenly over the salmon fillets.
  5. Pull the edges of the foil together and crimp closed to seal the packets.
  6. Divide among the indicated number of freezer bags. Label and freeze flat.
