Lighter Tuna Noodle Casserole

<p>Classic, comforting tuna noodle casserole lightened up a bit. Use the One A Month Mom recipe for Cream of Something soup recipe and you will feel much better about eating this casserole dish on a chilly fall day.</p>

Ingredients

  • 16 ounces Elbows, Whole Wheat
  • 2 cups dice Mushrooms
  • 1/2 cups dice Onion
  • 5 teaspoons mince Garlic, Cloves
  • 3 cups Cream of Mushroom Soup
  • 2 cups Chicken Broth/Stock, Low Sodium
  • 20 ounces drain Solid White Albacore Tuna in Water
  • 1 1/2 cups Peas, Frozen
  • 1/4 teaspoons Ginger, Ground
  • 1/4 teaspoons Black Pepper
  • 1/2 cups Panko Bread Crumbs
  • 1/4 cups Parmesan Cheese, Grated

  1. Cook macaroni al dente according to package directions.
  2. Meanwhile, heat a large skillet over medium heat.
  3. Saute the mushrooms, onion, and garlic for 2-3 minutes.
  4. Add cream of mushroom soup, chicken broth, tuna, peas, ginger, and pepper. Heat through.
  5. Drain water off cooked pasta.
  6. Add cooked macaroni to pan and mix.
  7. Place mixture in a greased baking pan.
  8. Top with bread crumbs and grated Parmesan cheese.
  9. Bake casserole at 400 degrees for 45-60 minutes.
