Lighter White Chicken Chili - Lunch Version

<p>A hearty bowl filled with chicken, green chilies and beans. This is a perfect meal as the temperatures begin to get cooler to warm you up and settle into fall.</p>

  • 2 cups Great Northern Beans, Dry
  • 6 cups Chicken Broth/Stock, Low Sodium
  • 2 teaspoons mince Garlic, Cloves
  • 1 cup dice Onion
  • 4 ounces Mild Green Chiles, Diced, Canned
  • 1 tablespoon seed and dice JalapeƱo
  • 1 1/2 teaspoons Oregano, Dried
  • 1/2 teaspoons Cloves, Ground
  • 1/4 teaspoons Cayenne Pepper
  • 3 cups cook and dice Chicken, Boneless Breasts

  1. Combine beans, chicken broth, garlic and half of the onions in a large soup pot.
  2. Bring to a boil.
  3. Reduce heat and simmer until beans are very soft, about 3 hours.
  4. In a skillet, saute remaining onions.
  5. Add chopped green chiles, jalapeno and seasonings. Stir to combine.
  6. Add chile mixture and chicken to beans.
  7. Simmer 1 more hour.
  8. Remove from heat and serve.
