Freeze For Later Cooking Directions
These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).
Why would I want to freeze this?
- In a saucepan over medium-high heat, melt butter.
- Add heavy cream, dijon mustard and garlic and cook for 3-5 minutes.
- Continuously whisk in the xanthan gum to prevent clumping.
- Use a separate small dish, beat the yolk, then whisk in a small amount of the warmed cream to temper the egg and keep it from cooking as you slowly add it to the cream mixture whisking the whole time.
- Whisk the cream as it continues to thicken for the next 10 minutes.
- Stir in the gruyere cheese and half of the parmesan cheese, salt and pepper and cook an additional 5 minutes.
- Add the ham, chicken and cauliflower, tossing to coat.
- Divide among indicated number of greased baking dishes and sprinkle with remaining half of the parmesan cheese.
- Cover with foil, label and freeze.
