  • 3/4 pounds Mahi Mahi
  • 1 cup Coconut Milk, Canned
  • 3/4 cups Macadamia Nuts, Roasted
  • 1/8 cups Coconut Flour
  • 1/8 cups Almond Flour
  • 1/8 cups melt Coconut Oil
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper
  • 1/8 cups Coconut, Shredded, Unsweetened

Freeze For Later Cooking Directions

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. Place Mahi Mahi fillets in bag and add coconut milk.
  2. Allow to sit for 30-60 minutes.
  3. In food processor, grind macadamia nuts until ground.
  4. Add coconut flour and almond flour and mix well.
  5. Place macadamia nut mixture into bowl.
  6. Line a baking sheet with foil, and brush with coconut oil.
  7. Place Mahi Mahi fillets on foil and season with salt and pepper.
  8. Bake at 425F for 5 minutes.
  9. Mix remaining coconut oil into macadamia mixture.
  10. Flip fillets over and spread with macadamia mixture, pressing down so that it sticks.
  11. Add shredded coconut to top of mixture.
  12. Bake an additional 8-10 minutes or until golden brown.
  13. Flash freeze.
  14. Once frozen, divide among indicated number of freezer bags. Label and freeze.
